Korean Miso Glazed Salmon

This Korean miso glazed salmon is rich, savoury and slightly sweet, with a subtle kick of heat. It’s a simple dish that feels elevated, perfect for a quick weeknight dinner or something a little more special.

 

Ingredients

  • 2 salmon fillets
  • 1 tbsp white miso paste
  • 1 tbsp gochujang (Korean chilli paste)
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 1 garlic clove, minced
  • 1 cup cooked jasmine rice
  • 2 tbsp chopped spring onions
  • 1 tbsp coriander leaves
  • 1 tsp sesame seeds

 

Method

  1. Preheat your oven to 200°C (fan-forced). Line a baking tray with baking paper.
  2. In a small bowl, mix the miso paste, gochujang, honey, soy sauce, sesame oil, ginger and garlic until smooth.
  3. Place the salmon fillets on the tray and spoon the glaze evenly over the top. Let it sit for 10 minutes to absorb the flavours.
  4. Bake for 10–12 minutes, depending on thickness, until the salmon is just cooked through and slightly caramelised on top.
  5. Serve over warm jasmine rice and finish with spring onions, coriander and sesame seeds.

 

This dish is best served fresh, with the glaze still glossy and the salmon tender. It’s a simple way to bring bold, balanced flavours into your everyday cooking without overcomplicating the process.
