Deconstructed Sushi Rolls

This recipe contains all the ingredients you’d find in a sushi roll, simply deconstructed into a bowl, so it is quick to make.

Ingredients

1-2 cups white or brown rice
½ lime cut into wedges
1 cup shelled edamame
½ cup shredded red cabbage
1 sliced avocado
2tbsp sliced green onion
½ cup fresh diced mango
1 cup chopped cucumber
1tbsp toasted black sesame seeds
1 cup nori strips

Sriracha Dressing

1tbsp toasted sesame oil
¼ cup raw cashews (soak in water for at least 30 minutes)
¼ cup of water
1tbsp tamari or soy sauce
1tbsp lime or lemon juice
1tbsp sriracha

Instructions

  1. Evenly divide the ingredients between 2 bowls and garnish with nori strips.
  2. Make the dressing by combining all the ingredients in a blender. Blend until smooth, for about 1-2 minutes. Adjust seasoning and drizzle over bowls.
