Easter Bun Loaf

It isn’t Easter without a hot cross bun, and this easy loaf is made for sharing.

Ingredients

40g melted butter

160g sultanas

1 egg yolk

2tsp dried yeast

21/2 cups plain flour

5tbsp caster sugar

250ml warm milk

2tsp cinnamon

Cross

80ml water

75g plain flour

Instructions

  1. Mix together two teaspoons of the sugar, yeast and milk and set aside five minutes until bubbles appear.
  2. Place remaining sugar, cinnamon, butter, flour and egg yolk into a bowl. Add the yeast and mix until you have a smooth dough. Add sultanas and knead on a floured surface for five minutes.
  3. Place the dough in a greased 20 cm x 10 cm x 7 cm loaf tin. Leave covered with a tea towel in a warm place for an hour until doubled in size.
  4. Preheat oven to 180°C.
  5. Make the cross by whisking together the water and flour and pipe onto the uncooked loaf. Bake for 40 minutes until golden.
  6. Make a glaze by placing two tablespoons of apricots jam and a tablespoon of water in a saucepan over low heat. Brush the warm jam mixture over the loaf.
