Flatbreads with Lamb and Feta Meatballs

These lamb and feta meatballs are easy to make and are the perfect topping for flatbreads.

Ingredients

600g lamb and mint sausages, removed from casings

280g Greek-style natural yoghurt

1 thinly sliced red onion

200g crumbled feta

1 Lebanese cucumber cut into ribbons

1tbsp olive oil

1 cup flat-leaf parsley

Freshly cracked black pepper

Instructions

  1. Put half the feta and all the sausage meat into a large bowl and mix thoroughly. Roll the mixture into balls.
  2. Heat the oil in a large non-stick frying pan over medium heat and cook the meatballs for 12 to 14 minutes until browned and cooked through thoroughly.
  3. Spread some yoghurt on each flatbread, top with the meatballs, onion, parsley and cucumber, and season with pepper.
