Turkish Eggs

Why not try this recipe if you are looking for an interesting and different brunch dish? It is quick to prepare and cooks in just 10 minutes.

Ingredients

2 eggs

1 cup Greek yoghurt

1tbsp vinegar

1/2tsp smoked paprika

8-10 mint leaves

½ garlic clove

1tsp chilli flakes

55g unsalted butter

Fresh dill fronds

Instructions

  1. Finely chop a few fresh dill fronds with the mint and grate or crush the garlic clove. Mix together with the Greek yoghurt, season with salt and pepper and set aside.
  2. Fill a large pot with water and bring to the boil and add vinegar, swirling to create a vortex. Crack one egg into the vortex and cook for three minutes for a perfectly runny yolk. Remove the egg with a slotted spoon and set it aside while you repeat the process with the next egg.
  3. Melt the butter into a pan, then add the spices. Stir until the spices are thoroughly mixed and the sauce is ready to serve.
  4. Place the Greek yoghurt into a serving bowl with the eggs on top and pour over the chilli sauce. Garnish with a little extra mint and dill.
