Chopped Chicken Salad with Honey Mustard Dressing

This chicken salad is light and refreshing and perfect for summer.

Ingredients

Dressing

1/4tsp salt

2tbsp olive oil

1/3 cup honey

2tbsp apple cider vinegar

3tbsp whole-grain mustard

1 clove minced garlic

2tbsp Dijon mustard

Salad

4 uncooked chicken breasts

11/2 cups halved cherry tomatoes

2tbsp olive oil

2 diced avocados

225g cooked and diced bacon

¼tsp black pepper

6 cups chopped romaine lettuce

½ cup diced red onion

Instructions

  1. Mix together the dressing ingredients and pour half into a bowl. Use the remaining dressing to marinate the chicken and place in the fridge for a couple of hours.
  2. When the chicken has finished marinating, warm the olive oil in a skillet over medium heat. Remove chicken from marinade and season with salt and pepper. Cook the chicken breasts in the skillet for approximately six minutes on each side, until cooked through. Remove and let rest.
  3. Divide lettuce between four plates and top with tomatoes, avocado, onion and bacon. Slice each breast and place on top.
  4. Whisk the remaining marinade with two tablespoons of water, season with black pepper and pour over each salad. Serve and enjoy.
